The Seattle Seafair Pirates Official Web Site - Pirate Kings of the Northwest since 1949  It's a high-humored heist by the Seattle SEAFAIR Pirates. The salty troupe's shenanigans and formidable float, the Duck, have become synonymous with SEAFAIR revelry. The Pirates, originally members of the Washington State Press Club's Ale & Quail Society, banded together in 1949 to promote Seattle and Seafair while having fun and serving the community. Despite their bad-guy image, the Pirates make dozens of appearances annually to hospitals and nursing homes. During the height of Seattle's SEAFAIR Celebration, they appear at several events and parades each day.  The 40+ Pirates are an elite troupe who carefully selects their members based on their ability to mix well with the public and for their unique musical or theatrical talents.

Creole Turtle Soup

Many many years ago when ships were at sea for months on end some time the wind would all but stop blowing the ships would almost stop. The seaman if around the West Indies looked for a bit of a change of diet. They could find the sea turtle and with the help of a good cook have a Gourmet meal . So you guessed it today's recipe is for Turtle Soup.

Takes about 2 hr's And feeds a crew of 12.

Ingredients:.....

And you prepare it this way...

  1. In a two-gallon stockpot, heat oil over medium high heat. 
  2. Add flour and using a wire whisk,  stir constantly until roux is golden brown.  - Do not scorch. Should black specks appear,  discard and begin again.
  3. Add onions, celery, bell pepper, garlic and tomatoes. 
  4. Sauté three to five minutes or until vegetables are wilted.
  5. Add turtle and diced ham and stir well into mixture. 
  6. Cook approximately  ten minutes. Then add chicken stock, one ladle at a time until all is incorporated.
  7. Add bay leaf, thyme, allspice, nutmeg, mace, cloves and lemon juice. 
  8. Bring to a low boil, reduce to simmer and cook approximately one to one and a half hours or until turtle is tender. 
  9. Once the soup is cooked, add Madeira wine and grated eggs.
  10. Season to taste using salt and cracked black pepper.
