The Seattle Seafair Pirates Official Web Site - Pirate Kings of the Northwest since 1949  It's a high-humored heist by the Seattle SEAFAIR Pirates. The salty troupe's shenanigans and formidable float, the Duck, have become synonymous with SEAFAIR revelry. The Pirates, originally members of the Washington State Press Club's Ale & Quail Society, banded together in 1949 to promote Seattle and Seafair while having fun and serving the community. Despite their bad-guy image, the Pirates make dozens of appearances annually to hospitals and nursing homes. During the height of Seattle's SEAFAIR Celebration, they appear at several events and parades each day.  The 40+ Pirates are an elite troupe who carefully selects their members based on their ability to mix well with the public and for their unique musical or theatrical talents.

Smoke Roasted Chicken

The Page has been doing so well we are putting in a new recipe every week now.  I am asking a Brother Pirate to do this page with me.   And you will see that he is a great cook and has a large recipe book to share with you as well.  So you will be seeing his works in the recipe pages.

You will need the following:

Thoroughly wash and pat dry the bird.

  1. Build a rather large pile of briquettes on one side of the BBQ and ignite using lots of lighter fluid (its more fun that way).
  2. Meanwhile, rub the chicken halves with olive oil and season.
  3. When the coals are BLAZING hot and ashen white, spread them out keeping them mostly to one side of the cooker. 
  4. Pile the fruit wood on top of the coals completely covering them. 
  5. Replace the grill and place the chicken on the side OPPOSITE the coals and wood. 
  6. Cover and shut the vents on top of the domed cover.  It will smoke like a sonovaditch, so put it to close to any doors to the house.  In other words DON'T put the cooker close to any doors or windows. 
  7. I always start the chicken skin side up and turn it half way through.  It will take about 20 to 30 minutes to cook and you may need to add more wood at some point.

The important thing to remember is to keep the cooker covered.  Otherwise the wood will begin to flame and ruin the chicken. 

Serve with several gallons of cold beer or if necessary, something else.
